Visit your local Farmer's Market to take advantage of all the delicious end of Summer produce for this bright and cleansing Seasonal Summer Kale Salad. One minor adjustment I've been making to my routine these last few weeks with IIN is continuing to add more and more vegetables into my diet in order to crowd out or reduce the amount of animal products I'm eating. My obsession with Mediterranean food is no secret! In gearing up for my incredible Mediterranean backpacking adventure, I'm enjoying some delicious Paleo Mediterranean cuisine right at home.
