Summer Squash Gratin

This week at Institute for Integrative Nutrition, or IIN, as I fondly think of it, we are learning all about Ayurvedic Medicine. It still amazes me how much wisdom and knowledge there is to be found in ancient ideologies like Ayurvedic Medicine and Traditional Chinese Medicine. In our Western world, we’ve often been taught to think these ways of life are primitive and inferior to our Western Medicine technologies and developments. Not to say that Western Medicine hasn’t brought many great advancements Read more […]

For some of you it may be starting to look and feel like Fall, but here in California it still feels like Summer to me! Visit your local Farmer’s Market to take advantage of all the delicious end of Summer produce for this bright and cleansing Seasonal Summer Kale Salad. You can even experiment with the different varieties of kale they have to offer. For this salad, I used a combination of my two favorites- Curly and Purple Kale. And this salad is great for a BBQ or Summer picnic. And what’s Read more […]

One minor adjustment I’ve been making to my routine these last few weeks with IIN is continuing to add more and more vegetables into my diet in order to crowd out or reduce the amount of animal products I’m eating. Don’t get me wrong, I already eat a ton of vegetables compared to the average American diet, but we can always use more. As you may know, Paleo could mean eating tons of meat with the most popular current trend idolizing bacon, but it certainly doesn’t have to. One common thread across Read more […]

Bacon adds depth to this delicious green bean salad

Green Bean and Radish Salad with Parsley Buttermilk Dressing

These hot August days continue to call for cooling Summer salads! This green bean and radish salad with creamy parsley dressing is a great dish on its own or as a side dish for sizzling Summer BBQ fare. Bring it to a picnic or potluck, or host your own end-of-Summer dinner party and pair it with my Paleo Slow-Cooker Baby Back Ribs or Spinach-Dip Stuffed Chicken. The original recipe calls for yellow wax beans, which would be fantastic to the eye and your taste buds, so if you’re lucky enough to find Read more […]

Next month that will be a reality!!! In the meantime, I will continue to enjoy all of the fresh ingredients Read more […]
