Lemon Cardamom Moroccan Meatballs

I’ve really been craving some flavorful fresh Moroccan and Mediterranean cuisine, and it was about time I’d made these divine Lemon Cardamom Moroccan Meatballs.  I simply swapped out the breadcrumbs from the original recipe for some LSA mix that’s hugely popular with the health foodies here in Australia. It’s a mix of ground Linseed, Sunflower Seeds, and Almonds. It’s loaded with nutrients and makes a great binder in cooking, or substitute for flours in baked goods. And for all those back home in Read more […]

Muhammara - A Roasted Red Pepper and Walnut Dip found in Moroccan and other Arabic cuisines

Muhammara — Roasted Red Pepper Dip

One last Moroccan (or rather, Arabic) recipe for you! Muhammara is a delicious dip made of roasted red peppers, walnuts, and pomegranate molasses typically made in Arabic cuisine such as Turkish or Moroccan. If you’re lucky you may have had the chance to try this tasty treat on a mezze plate. I like to think of it as the Moroccan alternative to hommus. You can use it\ as a spread, a dip, or a condiment to just about anything! Of course traditionally, it’s served with pita or flat bread, but I like Read more […]

Moroccan Mint Tea

Moroccan Mint Tea

Continuing on our Moroccan cuisine carpet ride, it’s time for some Mint Tea! 😉 I couldn’t believe the Moroccan people were drinking and serving mint tea in the dead of Summer, but I understood as soon as I tasted it. I’m generally not a big tea drinker given my coffee obsession, but I absolutely love the contrast of the cooling mint in this hot beverage. In the Moroccan culture, it is a beautiful and hospitable gesture to offer someone a fresh glass of mint tea. My favorite experience with Read more […]

Homemade Moroccan Chicken Bastilla

Chicken Bastilla–A Taste of Morocco

I’m finally getting around to writing some more travel-inspired recipes! A few months ago I was blessed enough to experience the Magic of Morocco. For four short days I was immersed in a sea of beautifully bright colors, hand woven carpets, expert salesmen, the pungent smell of tanneries producing leather, mint tea, and delicious, soulful, beautifully crafted food. I am fascinated by their entire culture, and specifically, there is something so majestic to me about Moroccan cuisine.  It was a Read more […]

Hearty Moroccan Chicken Stew

Moroccan Chicken Stew

I am counting down the weeks until I am devouring authentic local Mediterranean food and collecting recipes from all of the countries I will be visiting! But in the meantime, I’m enjoying delicious Mediterranean food right in my kitchen in Southern California, including this delicious Moroccan Chicken Stew. It has a similar spice profile to my Chicken Tagine, but I love the heartiness and velvety texture added by the tomato paste and chickpeas, turning this into an entirely different and equally Read more […]
