Sometimes there’s nothing more refreshing than a crisp salad loaded with all your favorite toppings! It was one of those weeks where I just didn’t have enough greens in my life, and this bright, fresh and flavor-packed salad was the delicious result. I love using greek yogurt as protein-rich base for salad dressings, but simply swap it out for organic (maybe even homemade) mayonnaise if you’re strictly dairy-free. And I just can’t get enough of the roasted pistachio oil from Trader Joes. This salad Read more […]

Mexican food has always been a weakness of mine. Some days there’s nothing I want more than a giant bean and cheese burrito loaded with guacamole and salsa verde, which for the most part, I’ve given up. But just because I don’t eat flour tortillas or legumes doesn’t mean I still can’t enjoy the rich fresh flavors of salsa verde! Lucky for me, there are hundreds of authentic Mexican restaurants in Southern California that make great salsa verde, so it never really occurred to me to make it at home. Read more […]

Avocado Chicken Soup — A Paleo Latin Pho

I absolutely LOVE chicken tortilla soup..but that is obviously not in the Paleo or Primal vocabulary so I was thrilled when I found this grain-free Avocado Chicken Soup that has all the delicious flavors of tortilla soup without the corn and flour! It reminds me of a Latin flavored Pho with the hearty flavorful broth and fresh kick from the scallions and cilantro. Avocado Chicken Soup (Adapted from Mama Miss) (Difficulty-Easy; Serves 4) 2 organic free-range chicken breasts 3 tsp extra Read more […]

Creamy Green Gazpacho

After having the convenience and delicious flavor of home-grown tomatoes right from the garden, I never want to buy tomatoes at the store again! And I won’t have to because we have so many of them! I wanted to use them up before they went bad, and what better way to do that than a cool Summer gazpacho? I liked the idea of this Epicurious version with lots of veggies and greens packed in for a creamier and more substantial version of the old tomato standby. This recipe is meant for those cooking Read more […]
