After going Paleo/Primal, I just don’t get the same enjoy­ment out of Christ­mas cook­ies this sea­son any­more, so I thought it was about time to adapt some of my hol­i­day favorites to a grain-free ver­sion. You guys will nev­er believe it BUT you can make Paleo Pas­ta right at home!!! My broth­er found this won­der­ful recipe on the Paleo Cup­board. Amy, you are a Paleo GENIUS!! (Must be in the name ;)).  I haven’t made my Cau­li­flower Piz­za crust in for­ev­er, so when I saw this zuc­chi­ni piz­za on Pin­ter­est I fig­ured it was about time I had some piz­za in my life. I was also real­ly crav­ing pep­per­oni so that’s exact­ly what I had. I’ve made my share of spaghet­ti squash dish­es in place of pas­ta which is so easy, but I had yet to do any­thing with zuc­chi­ni since I didn’t have a spi­ral­iz­er and was hon­est­ly too lazy to juli­enne zuc­chi­ni noo­dles by hand.
