Spaghetti Squash with Black Truffle Cauliflower Alfredo Sauce

Amy No Comments

You may already know about my truffle obsession. If not, check out my truffle ravioli or truffle quinoa! And this, ladies and gentleman, is my Primal version of a truffle Alfredo. It starts with a traditional bechamel sauce using unsweetened coconut milk, an almond-meal based roux, and delicious Italian truffle cheese from Trader Joes (which you can also find at Whole Foods and other specialty stores). I added cauliflower purée to thicken the cheese sauce and sneak all those extra vitamins and Read more [...]

Ricotta Cookies are perfect for the holidays!

Primal Ricotta Cookies

After going Paleo/Primal, I just don't get the same enjoyment out of Christmas cookies this season anymore, so I thought it was about time to adapt some of my holiday favorites to a grain-free version. I started with the recipe that just about everyone loves-- Ricotta Cookies. If I never ate real pizza again I would be completely happy. This zucchini crust is a little bit more moist than the cauliflower version, most likely because I didn't add any almond meal (I suggest trying this for a firmer crust--just add 1/4-1/2 cup), but it has tons of flavor--I'd Read more [...]

Creamy Basil Zucchini Pasta

Creamy Basil Zucchini Pasta

I've made my share of spaghetti squash dishes in place of pasta which is so easy, but I had yet to do anything with zucchini since I didn't have a spiralizer and was honestly too lazy to julienne zucchini noodles by hand. When I saw this recipe on Pinterest I decided it was time to invest in a veggie spiralizer and I am so glad I did! I bought this GEFU Spiralizer on Amazon and it is super easy to use and makes beautiful zucchini spirals. I definitely recommend it! I also recommend this creamy, Read more [...]
