Another Thursday night came and went, which means it was time for another treat to take to the Santa Monica pier to share with everyone. I think last week was the best concert yet! With my ongoing love for Mediterranean flavors, I had to make this Walnut and Herb Salmon recipe in my inbox from Epicurious. I wasn’t exactly sure of the thought behind stuffing it, and thought it would be better to just spread this herby pesto-like mixture right on top of the Salmon, so here it is! I served mine with a delicious Quinoa Salad with Asparagus, Peas, Avocado and Lemon Basil Dressing–Yum!
